Presentation

Unleavened bread is a bread linked to the Jewish tradition, the name derives from the Greek "azymos" (which means yeast-free) which in Hebrew becomes "mazzah". The unleavened bread is in fact a pure and poor bread without salt or yeast made only with flour and water, a food symbol of the Jewish Passover that commemorates the exodus from Egypt, representing the bread of the fugitives because it was prepared quickly by fleeing Jews, in fact, this bread does not require leavening, it mixes quickly and cooks quickly and above all it has the advantage of long shelf life. Unleavened bread is a food that carries deep religious meanings, it is the bread of the memory of a people, a ritual and spiritual food that accompanies the Easter celebrations of the Jewish community. Unleavened bread is a fascinating recipe for its history and captivating for its speed of execution which makes the preparation of bread affordable for everyone. The result obtained is a crunchy sheet with a neutral flavor that lends itself well to any combination of flavors.

INGREDIENTS FOR 4 SHEETS

Cold water 135 g

00 flour 300 g

PREPARATION
How to prepare unleavened bread

To make the unleavened bread, start to heat the oven to 250 °, then place the sieved flour in a bowl 1, pour in the cold water 2 and start to knead vigorously 3 at high speed for 2-3 minutes to mix the ingredients .

Then continue to knead by hand on a pastry board with firm and rapid movements, folding the dough 4 on itself again for another 2-3 minutes (the time may vary based on the familiarity you have when kneading by hand). You need to obtain an elastic dough 5, divide it into 4 equal pieces and roll them out with the appropriate long and narrow rolling pin 6. To obtain a good result, we recommend not letting the dough rest but rolling it out immediately.

You have to roll out each piece to a thickness of 3mm, it does not need to have a defined shape, it must be a sort of disc with a diameter of about 22 cm 7. With these doses you will get 4 sheets of unleavened bread. With the prongs of a fork or with a notched wheel, pierce the entire surface of the bread 8. Bake the discs of bread in a static oven at 250 ° directly in contact with the bottom of the oven for 7 minutes, then turn them and continue cooking for another 7 minutes (you can cook them one at a time). When cooked, take out of the unleavened bread 9 and let it cool before bringing it to the table.

STORAGE
Unleavened bread is stored in a paper bag away from moisture for about 1 month. Freezing is not recommended.

STORAGE
Enjoy unleavened bread as an alternative to the classic bread bruschetta, light and crispy it will combine with many delicious and appetizing ingredients, creating the right balance of flavors!
